The University of Missouri Extension’s Value-Added Meats (VAM) program illustrates the power of public and private partnerships in expanding value-added meat production. By fostering collaboration with key organizations- the Missouri Department of Agriculture, local farmers' markets, and community groups- the program helps livestock producers transition from commodity production to higher-value products like freezer meat, individual cuts, and meat bundles. These partnerships provide essential support, enhancing market access, creating a strong network, and offering the tools necessary for producers to diversify their income streams and navigate market fluctuations.
This presentation will highlight the critical role of partnerships in helping livestock producers achieve financial stability, reduce risks, and respond to consumer demand. The VAM team offers valuable resources, including enterprise budgets, marketing guides, and access to local processing networks, empowering producers to make informed decisions and succeed in direct-to-consumer sales. As a direct result of these partnerships, the program has achieved significant outcomes, including enhanced market knowledge, increased sales, and improved farm revenues for participating producers. Additionally, these partnerships have contributed to the expansion of Missouri’s livestock processing capacities and local meats.
Attendees will gain insights into the key partnerships that drive success in value-added meat production, including practical strategies, tools, and resources that can be applied in their own communities. Educators and extension agents will leave equipped to replicate similar programs, ultimately supporting the growth and sustainability of value-added meat businesses across the country.
